When it comes to Hue food, every Vietnamese will come up in their mind with the dish, because this dish is simple, cheap but delicious and can be found everywhere from small shops in the market, vendors on the streets to luxurious restaurants around the city. The dish is full of mussel as the main ingredient and various toppings such as fried diced pork, fish sauce, raw vegetables, banana flower, bean sprouts, white taro body shredded, peanut roasted, etc. The mix brings a typically bold and spicy flavor of Hue. They also serve these ingredients with noodles, gruels, and soups.

  1. Khoai Cake

The cake is the special fried cake of Hue ancient capital. It is like “banh xeo” in Southern Vietnam but different in shape. Banh khoai has a round cake, filling with cooked shrimp, rolls, eggs, and pork. When the fried cake is finished, it has a golden color, folded in half on a plate. Guests are served with lettuce, herbs, bean sprouts, star fruit. Take a bite and you can feel the crispy crackers melt in the mouth. Visitors can feel at the same time the fat, sweet, fleshy, sour flavor from this crispy dish. Especially, you can dip the cake into a special sauce, to get a fully typical Hue Food.

Along with the main ingredients are “nem lui” (ground beef and pork grilled on charcoal stove), the deliciousness of this dish is in the side vegetables such as herbs, starfruit, prunes, sliced green bananas, and the sauce mixed from dozens of different ingredients like pig liver, oil, buttermilk, sugar, soy sauce, fish sauce, cinnamon, coconut, etc. When eating, you wrap the “nem lui” in a thin rice paper and add some fresh greens, rolling it up and then dip in peanut sesame sauce. And there you go!

  1. Banh Beo, Banh Loc, Banh Nam, Banh Ram It

Banh Beo, Banh Nam, and Banh Loc are the 3 most typical cake of Hue and they are all made from rice flour. Banh Beo has a small shape like Japanese duckweed, filling with prawn and served with sweet fish sauce. The ingredients of the banh loc, banh nam is also similar to the banh beo, but it is wrapped with banana leaves before steaming. Banh ram it is a triple-layered circular stack of varying textures with a crispy, deep-fried rice cracker, a rice dumpling stuffed with pork and shrimp in the middle and topped with scallions and minced shrimp. You should try all 4 these types to see their difference in flavor.

It can be said that Banh Canh is a famous soup in the Central region, but the taste is not the same. In each province, this dish is slightly changed to suit people’s tastes or based on the available ingredients of that land. The Banh Canh in Hue is also bearing the characteristic flavor of red broth from crab and shrimp. When it comes to Banh Canh in Hue, people often mention the soup of Nam Pho and of Ba Doi.

These are the two types of cakes that if you are not a local, you are unlikely to know about. Banh Ep and Banh Trang Trung are light food which is often eaten by young people. While Banh ep is sticky, made of flour, Banh trang trung is made from grilled rice paper and both are topped with eggs, pate, meat and other colorful toppings. You will seat in quite a small shop, maybe surrounding the sellers. Then you can order one by one. You can see how the make and grill them, or even smell and hear the funny sound when they made Banh Ep.
