If you have chance to visit here one day, it’s impossible to miss Danang cuisine. Danang cuisine brings something traditional but new, captivating but simple in it. Danang cuisine also show us the variety in ingredients and meticulosity in cooking of Danang people.
At first, I and my friend are surprised by the enthusiasm here. People, despite a small restaurant on the sidewalk, prepare food in many options of taste and ask us detail about what we want. Some aunts are really friendly and funny to tell story. It ‘s no doubt that Danang is voted as one of Top livable cities in the world.
Mi Quang – Quang noodle
Quang noodle is the first dish i and my fellow traveller try after drop here in the morning. Actually, Quang noodle comes from the Quang Nam province. The main material of dish is rice noodle(in yellow or white), herb and flower of banana eaten with broth. Local people often ask what kind of broth you want. They are 2 main types of broth: chicken broth or pork broth.
A bowl of Quang noodle is often served with a little broth enough to wet noodle. Therefore, the broth must be strongly flavor, quite thick and yellowish. After pouring broth, people put some peanut, cracker on it.

Noodle salad with anchovy fish sauce
Noodle salad is must-try dish to gourmets who love Vietnamese cuisine. Anchovy fish sauce is quite weird to foreigners for the first time. However, trust me! you have absolutely been conquered for the second try.
Noodle salad is prepared well when there are full of topping: boiled noodle, roasted noodle, vegetable, unripe papaya, peanuts and especially young jackfruit. Young jackfruit salad attracts me a lot when we’re waiting for order. It also fits very well with anchovy fish sauce and definitely a highlight for Danang cuisine.

Bun Cha Ca
In English, it means rice noodle soup with grilled chopped fish. It is a common dish in almost Vietnam Central provinces. Broth is made from fresh fish in order to have a natural sweet, added spices for more tasty. There are often 2 kinds of chopped pie: grilled and boiled one. To me, grilled chopped fish is a little bit delicious. It is served with basil, salad, bean sprouts and green chilli.
Bun Cha ca is more appetizing when it’s still hot. The fragrance and sweetness of fish, spicy of chilli will make you understand more about Danang cuisine as well as its residents.

Vietnamese traditional cake
Yes, i’d like to mention: banh beo, banh nam and banh loc which are the heritage dish of Central Vietnam. It is especially famous in Hue, Quang Nam and Danang. Banh beo is a kind of rice cake, served in a small cup for each cake with some bread crumbs, peanuts and cooked chives on it. Waitress often bring a tray of 10 cups for each other. Don’t worry if you think it’s too much. It’s small so that Vietnamese people can eat 2-3 trays for each.
Banh nam and banh loc are wrapped in banana leaves in small size. They can be eaten straight from the leave by using a spoon. You can add some fish sauce or tangy chilli sauce to go with it. You should definitely try them once when getting here.

Danang cuisine is affected a lot by Quang Nam province. Cau Lau is one of dishes coming from Quang Nam residents. Cao Lau and Quang noodle are two special things to mention about this region. At the first-looking, Cao Lau’s appearance look like Chinese or Japanese noodle. And the taste is quite weird, not taste like other Vietnamese food.
I can’t imagine what wonderful and meticulous person create this dish. The recipe will be a mystery forever until you ask the chief or search it. The pasta is bigger than normal noodle. The unique in recipe of making pasta is that people soak rice in ash water to create the yellowish brown pasta. There are roasted meat, vegetable and fried pork skin on it. All mix perfect with broth make the unique taste and smell.

Like other provinces through Vietnam, Banh xeo is a rice flour crepe filled with bean sprouts, shrimp, spring onions, and mung beans. I like how crispy the pancake is. It’s often served with pork skewers, rice paper, unripe papaya salad and a plate of vegetable. All are wrapped together with rice paper outside and dip it into a special sauce. It’s mixed with peanut, chillies,…to be thick and tasty.
